Hey all, I found an amazing guide to cooking top of the line barbeque chicken. I am kicking myself for not getting this sooner!

It’s by a guy named Bill Anderson who started the Chatham Artillery BBQ Team. This is a guy who literally competed all over the world for various titles and has a massive lineup of trophies to back his name. He is a true master of his art, and has put all his most closely guarded secrets and recipes into one book, Competition BBQ Secrets.

After diving into this thing, I’m convinced I probably won’t ever barbeque quite the same again. Here are some of the things I got when I bought it:

  • Very detailed and exact barbecue recipes to cook championship ribs, butts, chicken and brisket. Each one is cooked differently and is explained in it’s own chapter.
  • Cookers – the different types and how you can slowbarbecue rib recipe smoke on anything from a professional offset smoker to your old trusty Weber kettle grill and everything in between.
  • How to smoke a turkey.
  • How your wood choice will impart that sought after smoke flavor and smoke ring.
  • How marinades, brines, and injections will improve the quality barbecue recipes.
  • You have to use rubs… your meats will be bland without them. We tell you all about them.
  • Your new book will also tell you how to properly use finishing sauces and glazes on your barbecue recipes – our raspberry vinagrette based “secret” recipe for chicken is worth the price of the book by itself. It’s by far the best chicken I have ever tasted and took 9th place out of 50+ of the best teams in the Country – not too shabby! This was at the Lakeland Pig Festival in Florida which is the Florida State Barbecue Championship. In another smaller contest (about 30 teams at Boone Hall in Charleston, SC), this recipe took 4th place. And more recently, this barbecue recipe took 1st place in Barnsville, GA. We also placed 2nd in ribs and 2nd in pork in this event.
  • This guide is taking me to the next level on my grill. After reading it I’m thinking I might even enter a few local competitions and see if I can get myself a trophy!

There are so many great things you can do with chicken. You can actually have chicken dishes up to three times per week, and your family will not even notice, because you will be using different easy chicken recipes all the time.

If you start with the side of a chicken, or perhaps several breasts or thighs, you can boil these parts of the chicken, adding some vegetable chunks and a bit of spice to them. When they are almost completely cooked, just add rice to the water, and when the rice is done, you have a chicken and rice meal that is healthy and that your family will love. The spices to add would be chopped onions, garlic, celery, carrots, and perhaps some dried oregano, parsley, thyme and basil.

For a spicier chicken meal, it can be Caribbean with Jamaican jerk. This is a sweet, yet very spicy blend of different spices that just turn on the taste buds. To get started, just cook the chicken in some olive or canola oil on top of the stove. When it is almost cooked through, add some chopped onion and garlic, bell pepper pieces, and if you like it hotter, some jalapeno. Kidney beans without the juice comes next, along with some tomato sauce and perhaps some diced tomatoes, as well. Add the spices, which will include Jamaican jerk, cumin and coriander, and serve this will plain white rice. This is a meal they will ask for again.

If you like Chinese food, those recipes are challenging. But there are prepared packets in the supermarket that make these recipes easy and delicious. They are inexpensive and easy to prepare. Kung pao chicken is the other one, with a real kick.

The sweet and sour packet will require onions, bell peppers, and pineapple chunks, and the results are delicious. And the companies that produce these little packets make Chinese cooking simple.

For the super bowl parties, and other gatherings, chicken wings with either barbeque sauce or hot wing sauce is a great treat. You can serve these with pork and beans, or potato and macaroni salads, or a variety of other finger foods, like mozzarella sticks, or even potato chips.

For endless delicious variations of so many choices for chicken, a chicken cookbook will have you experimenting for years to come. Prepare it as your family likes it, and stick to the favorites. As you make them more than once, they will become routine and no bother at all, serving different easy chicken recipes every week.

First, prepare your BBQ chicken marinade the day before you plan to grill. Though you can prepare this as a BBQ rotisserie chicken, the results are more flavorful when you cut chicken into pieces. cook the chicken for 30 minutes, turning every five, and rotating as needed to balance hot and cool spots on your grill.
After 25 minutes, check with a meat thermometer. Brush with sauce or glaze of your choice about 10 minutes before removing the chicken from the grill.

Probably the hardest meat to do on the grill, as it is so easy to under cook or over cook. Everyday people get food poisoning from under cooked chicken. Then on the other hand to prevent this you over cook it and have dry saw dust like meat.

Following a few simple steps will ensure your chicken gets cooked properly and come out succulent off the bone tender.

Many people pre-cook their chicken to prevent any food poisoning from occuring. You can do this by boiling your chicken pieces or pre-cooking them in the oven. Once you become more confident with chicken and use these techniques you will prepare your chicken using only your barbecue.

Boiling Chicken

The easiest way to prepare your chicken, simple boiling it for a few minutes to pre-cook the meat then finishing it off on the barbecue. The problem with using this method is you do get cooked chicken but it is not that tasty.

Only the outer layer of the chicken has flavour once you get past that the taste is dull. Although it is the easiest method to use it is my least favourite.

Pre-cooking using the Oven

This method involves marinating the chicken then pre-cook it in the oven. Once the chicken turns to a lovely golden brown colour place it on the grill.

By grilling the chicken after cooking it in the oven you give it a great smoky taste. This method is more tastier than the boiling option but still is not as good as full on barbecue chicken.

Barbecue Chicken

The more challenging option but difinitely the most tasty. The whole chicken gets a lovely barbecue flavour and the outer skin gets caramelized.

Use direct heat grilling for smaller cuts and indirect heat grilling for bigger pices or whole chickens.

Once you know how to BBQ chicken this method will be easier.

Chicken – Direct grilling

When chicken cooks the fat seaps through, which causes flare ups. When grilling chicken it is important to avoid flare ups at all costs, it is the easiest way to burn it.

Keep a water spray bottle handy to put up any flare ups that might occur. You can even remove the outer skin of your chicken pieces to prevent excess fat dripping through the grill grid.

Always smear olive oil or cook & spray on the grill grid to prevent the chicken from sticking. Turn chicken pieces over frequently to prevent it from burning. Coat the chicken with marinate every two minutes, this prevents the chicken from drying out.

To barbecue chicken using direct heat, marinate your chicken as per normal with your favourite marinate and spices. Pre-heat your grill to a medium heat and place the chicken on. Turn the pieces over every minute. Normally chicken is done when it has a brownish colour. Make sure it is cook through by do a test slicing through one of the pieces. There shouldn’t be any ‘pink colouring’.

Chicken In-Direct Grilling

By setting up your fire with an in-direct heat any excess oil dripping will not cause flare ups as it drips into a foil pan. Close the lid of the barbecue to create an oven effect and cook the chicken through.

Make sure your chicken is cooked by doing a test slice on one of the pieces. The chicken pieces will be done between 10 – 15 minutes just depending on heat and size of the pieces.
